Vegetable Pulao

Method Of Preparation
- Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for about 20-30 minutes, then drain and set aside.
- In a large pan or pot, heat the ghee or oil over medium heat. Add the cumin seeds and sauté until they begin to splutter.
- Add the sliced onions, green chilies, grated ginger, and minced garlic to the pan. Sauté until the onions turn golden brown and the raw smell of ginger and garlic disappears.
- Add the diced carrots, potatoes, green peas, cauliflower florets, and chopped green beans to the pan. Stir well to combine.
- Add the soaked and drained rice to the pan. Stir gently to mix the rice with the vegetables.
- Sprinkle the garam masala, turmeric powder, and salt over the rice and vegetables. Mix well to evenly distribute the spices.
- Pour the water over the rice and vegetables. Bring the mixture to a boil, then reduce the heat to low. Cover the pan with a tight-fitting lid and let the pulav simmer for about 15-20 minutes, or until the rice is cooked and the water is absorbed.
- Once the rice is cooked, remove the pan from the heat and let it sit, covered, for a few minutes.
- Fluff the pulav gently with a fork to separate the grains. Garnish with fresh coriander leaves.
- Serve the vegetable pulav hot with raita (yogurt dip) or your favorite side dish.
